Okay, so we’ve made this casserole several times in the past few weeks, and I thought it was about time for another recipe post.
First off, this is a great recipe for “customization” (I think our recipe we made was slightly different). You can change a lot of things about it.
The spicing we used, instead of chili powder, was 1/4 tsp. salt, 1/4 tsp. pepper, upped the oregano to 1 tsp. and added some cayenne (calling for 1 1/2 tsp. but I think we put in less as it is HOT).
Also we did not put on green onions–but they would be good! (we just like to work with what we’ve got).
So, some ways you could change it up?
–Mix in ground beef instead of the chicken on top. A little beef goes a long way.
–I must say we tried it with quinoa instead of rice and I actually liked it better–healthier and tastier!
–Add a layer of crushed corn chips. Seriously, it would be good.
Eat it plain or put it in tortillas.
